2022 Sparkling Wine
Made in the Methode Champenoise style for the highest quality and expression. Composed of 33% Pinot Noir and 66% Chardonnay. Grapes were hand harvested with relatively low accumulated sugar and a high level of acid. The fruit was gently pressed, whole cluster, to yield 120 gallons per ton, then fermented and aged in neutral French Oak barrels. Tirage occurred in Spring 2023 followed by three years of sur lie aging. Each bottle will be gently handled as many as five times before it is complete.
